<b>Ingredients</b><br />
- 3 sweet potatoes<br />
- Half a red onion<br />
- 4 small carrots<br />
- 1 tablespoon of paprika<br />
- 1 tablespoon of olive oil (for frying)<br />

<b>Method</b><br />
1) First, you need to boil the sweet potatoes, to make them soft enough to mash. To do this, put some water (enough to cover the potatoes) and a pinch of salt into a pan and bring to the boil. Cut the sweet potato into smallish chunks and place them in the pan. Boil for about 10 minutes, or until relatively soft.<br />
2) When the potatoes have finished boiling, remove the water from the pan using a colander (or a sieve), and place them into a large bowl. Mash with a fork, (don't attempt to blend them - I tried and failed miserably) and leave to cool.<br />
3) Whilst the potatoes are cooling, peel and grate the carrots into another bowl. Dice the onions finely and place that into the bowl. Mix the two vegetables together, and add to the sweet potato mash, along with the paprika. Mix all of the ingredients together thoroughly, you may want to use your hands to do this and ensure everything is incorporated.<br />
4) Next you need to fry the cakes. To do this, place the oil in a frying pan and place that over a high heat.<br />

5) Use your hands to form the first cake (you want about two heaped tablespoons of the mixture in each cake, and you want each cake to be about 1.5cm high), and place it in the pan. Fry the cake for a minute and a half on both sides before serving. Don't worry if they look a bit burnt (like mine do) they'll still taste great!<br />
5) Repeat step 5 until all the mixture is used up, you should be able to make about 7 cakes. If you don't want that many, you can scale down the amount of each ingredient, or, alternatively, you can make as many as you need and keep the excess mixture in the fridge for about 3-5 days. Remember to cover it with tin foil or a cloth to keep it fresh.<br />

Breakfast is probably my least favourite meal, mainly due to the fact that almost everyday I have to rush it. Honestly, I'm not what you would call an 'Early Bird', I absolutely <i>hate</i> mornings. I'm still in school, meaning I have to be out the door by 8 to ensure I'm not late, and my morning routine is simple: wake up, stay in bed lie in as long as possible (which is about 10 minutes to be honest), get dressed as quickly as I can, grab my stuff, and <i>try</i> to eat some breakfast before I leave. On weekdays, my breakfast is sometimes a cereal bar or a bit of yoghurt if I'm in a rush, but most days it's fibre/bran flakes with raisins, banana and a couple of almonds. Pretty tasty, but also pretty boring. Weekends are great because I get the time to actually make myself a decent breakfast. My weekend breakfasts are either banana pancakes (I usually make these on Sundays, so I'll post a recipe tomorrow!) or a smoothie bowl like the one above. Berries are my favourite type of fruit; sweet, rich in antioxidants and fibre, they fill me up quickly and are a great start to the day, however, can be a bit boring by themselves. Based on <a href="http://deliciouslyella.com/">Deliciously Ella's</a> recipe (her blog is a-m-a-z-i-n-g, you should definitely go check it out), I concocted a relatively fast and simple breakfast smoothie bowl that is really really tasty. Consisting of blueberries, strawberries AND raspberries, as well as banana and yoghurt, this is one of my favourites and I hope you all will try it!<br />

<b>- </b>1/3 cup of yoghurt (you can use whatever kind/flavour you want, but I recommend <i><a href="http://www.rachelsorganic.co.uk/range/big-pots/fat-free-blueberry">Rachel's Organic Fat Free Blueberry Yoghurt</a>, </i>it tastes amazing and is pretty cheap to buy too<i>)</i><br />
- 1/2 cup of strawberries<br />
- 1 cup of raspberries<br />
- 1 cup of blueberries<br />
- 1 frozen banana (to freeze, cut up a banana into slices - it's easier to do this before you freeze it - put the slices in a plastic sandwich/zip lock bag, and put that in the freezer for about an hour or two)<br />
- 2 tablespoons of granola to top it off (this is optional, and I don't actually have a granola recipe yet - I prefer to buy mine because it's quicker and usually costs about £1 for a kg at my local supermarket - <i>but</i>, if you do want to make your own there's a great recipe <a href="http://deliciouslyella.co.uk/tag/gluten-free-granola/">here</a>)<br />

<b>Method:</b><br />
This one's really simple; put all the ingredients (apart from the granola) into a blender, and blend on high for about a minute. Pour the smoothie into a bowl or a mug, and top it off with granola and a couple more berries if you want to. You can also add more yoghurt to the top!<br />

Honestly, I hate summer. It's too hot, like <i>way</i> too hot and I end up walking home everyday covered in sweat and feeling gross. Plus it's too bright. I think I'm secretly vampire.<br />

Anyway, the only reason I do like summer is that it gives you the excuse to drink copius amounts of ice coffee and smoothies and slushies. Although it rained today (oh how I love England) I decided to concoct my own summer smoothie/slushie recipe. It combines my two favourite things, strawberries and lemonade and went suprisingly well for a first attempt. It's super easy to make, contains a lot less sugar than regular slushies, and each serving is only around 30 calories. Plus it tastes really, really good.<br />
<br />
<b>Ingredients:</b><br />
- One cup of large strawberries (around 7-8 strawberries)<br />
- Two cups of diet lemonade<br />
- One cup of ice<br />
<br />
<b>Method:</b><br />
This one's really simple. All you have to do is cut off the tops of the strawberries, put all of the ingredients in a blender and blend for about half a minute. Then, pour your slushie into two glasses and serve.<br />
